I love summer.
Seriously, there’s just something about it that just makes me so happy. I love getting outside, and feeling the warmth of the sun on my skin. For the first time this year, I discovered berry picking. I’d never gone before and, after going strawberry picking a few weeks ago, I was hooked! Little A loves being out there, grabbing the berries and squishing them between his tiny, chubby little fingers.

So, after our day of errands was done sooner than expected, we decided to stop by a blackberry farm and pick our own. It was a beautiful day, not a cloud in the sky. And, after quickly filling our basked with big, juicy blackberries, I couldn’t wait to get home and make some cobbler.

Ingredients:

1/2 c. coconut flour
1/2 tsp. nutmeg
1 tsp. cinnamon 
1/2 tsp. baking soda 
pinch of salt
3 eggs
3/4 c. coconut milk
5 tbsp. maple syrup
4 c. blackberries


Start by preheating the oven to 325F, and greasing an 8×8 baking dish with ghee or coconut oil. 
Cover the bottom of the dish with blackberries-add more if you need them, and drizzle 1 TBSP of the maple syrup over the blackberries.
 
Next, you want to mix the wet and dry ingredients in their own separate bowls, before slowly mixing the wet ingredients into the dry ones. 
 
Pour over the blackberries and bake for 30 minutes.

  • This looks yummy! The only ingredient I would struggle with would be the coconut flour but I guess specialist health food shops would have this. I've got a great recipe for peach and blueberry cobbler which is one of my favourites, it'd be interesting to compare the two. More eating for me 🙂 #KCACOLS
